Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 Tbs EVOO
- 1 Tbs lemon juice
- 1/2 tsp dried oregano
- 1/2 tsp garlic powder
- 1/4 tsp paprika (or smoked paprika)
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a large bowl, whisk together to EVOO, lemon juice, oregano, garlic powder, paprika, salt, and pepper.
- Add the shrimp to the bowl and toss to coat evenly with the seasoning.
- Thread the shrimp onto the skewers (if using).
- Brush or oil your grill grates to prevent sticking - a little goes a long way.
- Place the shrimp on the preheated grill and cook for 2-3 minutes per side, or until the shrimp are opaque and cooked through. Be careful not to overcook.
- Serve immediately.
**To complete macros, serve with 1 large sweet potato topped with 1 tsp butter or 3/4 cup of cooked rice.
