Ingredients 

  • 1 lb large shrimp, peeled and deveined
  • 2 Tbs EVOO
  • 1 Tbs lemon juice
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika (or smoked paprika)
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions 

  1. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, whisk together to EVOO, lemon juice, oregano, garlic powder, paprika, salt, and pepper.
  3. Add the shrimp to the bowl and toss to coat evenly with the seasoning.
  4. Thread the shrimp onto the skewers (if using).
  5. Brush or oil your grill grates to prevent sticking - a little goes a long way.
  6. Place the shrimp on the preheated grill and cook for 2-3 minutes per side, or until the shrimp are opaque and cooked through. Be careful not to overcook.
  7. Serve immediately.

**To complete macros, serve with 1 large sweet potato topped with 1 tsp butter or 3/4 cup of cooked rice.
