Basic Protein Pancakes

Ingredients 

  • 2 eggs
  • 1/4 cup oats
  • 1 medium banana
  • 2 Tbs milk of choice
  • 1 scoop vanilla or chocolate whey protein powder
  • 1 tsp cooking oil or fat of choice
  • 1 rounded tsp peanut butter powder
  • 1 Tbs honey
  • 3 Tbs water
  • 3 Tbs nonfat Greek yogurt
  • 1 handful blueberries
  • 1 handful raspberries 

Instructions 

  1.  To a blender, add the eggs, oats, banana, milk and protein powder. Blend until you have a thick but smooth mixture. If too thick, add a drop of milk or water.
  2.  Heat a nonstick skillet over low heat, add cooking oil or fat. Pour 1/4 cup of batter into the skillet. Let sit until bubbles begin to appear on the surface and the edges look cooked. Carefully flip with a spatula and cook until golden.
  3.  As they cook, place the peanut butter powder and honey into a cup and gradually add water until you have a consistency you like.
  4.  Once the pancakes are ready, stack them up and serve with a dollop of nonfat Greek yogurt, some berries, and the honey peanut butter sauce.
