
Basic Protein Pancakes

Ingredients
- 2 eggs
- 1/4 cup oats
- 1 medium banana
- 2 Tbs milk of choice
- 1 scoop vanilla or chocolate whey protein powder
- 1 tsp cooking oil or fat of choice
- 1 rounded tsp peanut butter powder
- 1 Tbs honey
- 3 Tbs water
- 3 Tbs nonfat Greek yogurt
- 1 handful blueberries
- 1 handful raspberries
Instructions
- To a blender, add the eggs, oats, banana, milk and protein powder. Blend until you have a thick but smooth mixture. If too thick, add a drop of milk or water.
- Heat a nonstick skillet over low heat, add cooking oil or fat. Pour 1/4 cup of batter into the skillet. Let sit until bubbles begin to appear on the surface and the edges look cooked. Carefully flip with a spatula and cook until golden.
- As they cook, place the peanut butter powder and honey into a cup and gradually add water until you have a consistency you like.
- Once the pancakes are ready, stack them up and serve with a dollop of nonfat Greek yogurt, some berries, and the honey peanut butter sauce.
