
Apple Cinnamon Oat Pancakes

Ingredients
- 1/2 cup quick oats
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 2 eggs
- 2/3 cup coconut milk
- 1 small green apple, cored and sliced
- 1/3 cup nonfat plain Greek yogurt
- 1 tsp cooking oil or fat
Topping:
- 1 cup nonfat Greek yogurt
- 1 Tbs honey
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 2 Tbs raisins
Instructions
- Begin by adding the oats, baking powder, cinnamon, eggs, milk and apple to a blender. Blend the ingredients until they are well combined and the oats are broken down.
- Heat a large nonstick skillet over medium heat and add a tsp of cooking oil or fat.
- Pour 1/4 cup of batter into the pan. Let sit until bubbles begin to appear on the surface and the edges look cooked. Carefully flip with a spatula and cook until golden.
- Continue this process until all the batter has been used, adding more oil or fat to the pan as needed.
For Topping:
- Mix yogurt, honey, cinnamon and vanilla in a small bowl. Top pancakes with the yogurt mixture and raisins.
