Apple Cinnamon Oat Pancakes

Ingredients 

  • 1/2 cup quick oats
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 eggs
  • 2/3 cup coconut milk
  • 1 small green apple, cored and sliced
  • 1/3 cup nonfat plain Greek yogurt
  • 1 tsp cooking oil or fat

 Topping:

  • 1 cup nonfat Greek yogurt
  • 1 Tbs honey
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 Tbs raisins 

Instructions 

  1. Begin by adding the oats, baking powder, cinnamon, eggs, milk and apple to a blender. Blend the ingredients until they are well combined and the oats are broken down. 
  2. Heat a large nonstick skillet over medium heat and add a tsp of cooking oil or fat.
  3. Pour 1/4 cup of batter into the pan. Let sit until bubbles begin to appear on the surface and the edges look cooked. Carefully flip with a spatula and cook until golden.
  4. Continue this process until all the batter has been used, adding more oil or fat to the pan as needed.

For Topping:

  • Mix yogurt, honey, cinnamon and vanilla in a small bowl. Top pancakes with the yogurt mixture and raisins.
